Ingredients

1. Basmati Rice cooked - 3 Cups 2. Butter - 1 tsp 3. Curd - 3 cups 4. Salt - 1-1/2 tsp 5. Green Chillies sliced - 3 tsp 6. Minced Ginger - 1 tsp 7. Finely chopped Cucumbers - 2 8. or Green Mango - 1 9. Grated Carrots - 2-3 10. Green grapes - Handful 11. Milk - 1 cup 12. Mustard Seeds - 1/2 tsp 13. Curry leaves - few 14. Dry Chillies - 3-4 15. Ghee - 3 tblsp 16. Coriander leaves- 3 tbspns

Preparation

1. Put the cooked Rice in a deep dish, add the grated ginger, carrots, cucumber or mango, chillies, salt, curds mix nicely with hand, mashing the Rice a little.

2. Add the grapes and set aside. Put ghee in a small Kadai, add the dry chillies, curry leaves and mustard seeds.

3. When they crackle remove and add to the Curd Rice mixture, gently stir the seasoning into the rice.

4. Garnish with the coriander leaves and offer.
